A Day with Capital Club 16 | The Fresh Exchange

A couple weeks ago we joined Capital Club 16 owners, Shannon and Jake Wolf, to shoot some of their new spring dishes. For a couple weeks now, Jake has been talking about these mysterious white asparagus he cooked in German and was finally able to find in American. They are a taste all their own, and are unlike the normal green asparagus we are used to seeing. While it was difficult to not eat the entire menu, as we were still on whole 30, we did close out our whole 30 this last Saturday night to join them in celebrating their 5th anniversary and helped to set the world record for an old fashioned toast.

Jake and Shannon have become great friends as we have spent more time together. We first met at our Raleigh Simple Evening a few years back when Jake cooked our garden inspired dinner at the Videri Chocolate factory. Since our first Simple Evening together, we have had many wonderful evenings sharing great wine, food, and laughs. Their passion for hospitality and community radiates from the doors of Capital Club 16. They are constantly donating their food, time, and energy to host non-profit dinners often without public acknowledgement.  Their spirit of consistent quite giving, has inspired us time and time again. They are a constant reminder of why we love this city and call it home. If you  visit Raleigh it should be your first, and possibly last stop out of town.

The spring dishes shown are the kohlrabi soup with cream, traditional Spargel de-constructed, and an opened-face bison burger. All of the vegetables (excluding the white asparagus) are from local farms within 100 miles of their restaurant, and most of what is shown here is from the Raleigh City Farm, our local city farm less than a mile away.

We hope this gets you excited, and hungry, for some of the local spring and summer dishes in your area. I would love to hear some of your favorite dishes, restaurants, and if any of you have tried white asparagus.
